Years ago when my granddad passed away my dad gave me his recipe book. He loved baking and cooking for the ladies in his nursing home in his last years and he wrote lovely stories with each recipe. Browsing through the book now feels like he is sitting next to me enjoying every minute of it.
As a tribute to my granddad Daan Rossouw I picked one of my favourite recipes from his book to share with you. It is one of the recipes picked out for my family recipe book as well. The pictures were taken by my best friend Monique who is incredible at capturing the right moment in time. Love the way she just makes my baking come alive.
The day we baked and took the pictures was messy and fun and long… The poor men could only sit, watch, smell and wait but I am sure it was so worth all the torture.
Ingredients
- 3 cups Desiccated coconut
- 1 cup Plain Flour
- 4 cups Oats
- 1 1/2 cup Sugar
- 1/2 tsp Salt
- 1 t Cinnamon
- 1 cup Butter/Margarine
- 3tbs Golden syrup
- 2tsp Bicarbonate of Soda dissolved in 1/4 cup milk
Method
- Preheat the oven to 180 degrees. Grease a baking tray.
- Mix all the dry ingredients together in a large mixing bowl.
- Melt the butter and syrup together and add to dry ingredients. Mix well.
- Lastly, add the bicarbonate of Soda dissolved in the milk. Mix well.
- Press it down in your baking tray. It should be about 1cm thick.
- Place in a preheated oven and bake for 15-20 min. Until golden brown.
- Take out of oven. Let it cool for a few minutes then cut in squares and let it cool completely.
- Store it in a airtight container if there you have any left.
