Granny’s Oxtail


My Grandmother is turning 90 years old on 12 July 2017.  So I decided to make our family’s favorite recipe from her recipe collection in celebration of her birthday. When my uncles ask her to make something special for them this is the dish she makes. She is an extraordinary women who is loved by all her children, grandchildren and great-grandchildren. She inspires me daily with her Peace, Calm and Joy and I love talking recipes with her. I learned so much about food and the love of food from her.  She is strong in faith and strong in health and may I grow old just like her.

Ingredients

  • Oxtail, jointed and trimmed
  • 2.5ml  Tomato puree
  • 12.5ml Worcestershire sauce
  • 2 Onions, finely diced
  • 2ml Dried Rosemary or Thyme
  • 4 Cloves
  • 4 Peppercorns
  • 500ml Beefstock
  • 17,5ml Cakeflour
  • 15ml Butter
  • Salt and Pepper

Method

  1. Brown the oxtails and set aside.
  2. Brown the onions and put the oxtails back. Add the Stock, Spices, Tomato puree and Worcestershire sauce.
  3. Put lid on and place in a preheated oven (180 degrees)
  4. Cook for 2-2.5 hours. Add more stock during the cooking if needed.
  5. Add the salt and pepper after 2 hours of cooking and check if the oxtails are tender.
  6. When they are tender remove the spices and skim the fat off.
  7. In a small pot melt the butter and add the flour and cook until it is nice and brown. Then add to the meat and stir until it has thickened.
  8. Cook for another 15 minutes.
  9. Serve with rice or pearl barley

  1. Hi Amanda. Ek gaan Sondag hierdie beesstert van ouma maak terwyl sy nog hier kuier. Jy moet bietjie ouma se ouderdom aanpas. Die is amper 6 jaar verouderd. Maar dankie dat ons nou ook toegang tot jou blog het. Sal ‘n paar resepte uitprobeer. Groete. Oom Kobus.
