When I think of my grandmother, whom I am lucky to still have in my life, then I think of this easy chicken recipe. She made it a lot for us, especially when we went on a road trip. As a child you are always hungry and can’t wait for the halfway stop under the trees and your mum and grandmother opens up the plastic containers with the chicken , meatballs, sandwiches and boiled eggs. The chicken is lovely and can be eaten hot or cold. I love making a big batch and enjoy it hot with rice to soak up the sauce or cold the next day with salad or in a sandwich.
Ingredients
- 8 Drumsticks
- 1 Packet Cream of Mushroom soup powder
- 1 tsp Chicken spice
- A pinch ground cloves
- 750ml Apricot Juice or Orange juice if you can’t find Apricot juice
Method
- Mix the mushroom soup powder with the spice in a bowl or if you have a ziplock bag place it in the bag. Then add the chicken and mix well until the chicken is fully coated.
- Pour over the juice so that the chicken is well coated
- Cover with foil and bake in a preheated 180 degrees oven for 45 minutes.
- Remove the foil then bake it for a further 30 minutes or so until it is browned and the sauce has thickened well.
Ready to enjoy!
