Potato cakes: my Mother-in-law’s recipe


So when I met my in-laws many many years ago I had to learn how my mother in law makes her potato cakes as her boys really loves it. These fritter like cakes are delicious and very comforting and similar to traditional Jewish latkes. Even now when we have family weekends or holidays together this is the one recipe we all ask her to make for us. We will serve it with sausages and a simple bean salad. I will add the bean salad at the end of this recipe. This is my take on her recipe. Try it out and make it your own. Enjoy


Ingredients

For the potato cakes (10-12 Potato cakes) you will need:

  • 2 Large Potatoes, grated with the skin on.
  • 1 Onion, grated.
  • 1 tsp Baking powder.
  • 4 tbsp Plain flour.
  • 1 Egg.
  • 1 tsp Aromat/salt.
  • 1/2 tsp Black pepper.
  • Oil for shallow frying.

For the Baked Bean salad you will need:

  • 1 Tin Baked beans
  • 1/2 small onion, finely chopped
  • 1 Tbs Vinegar (we use white vinegar but malt vinegar works as well)
  • salt and pepper to taste

Just mix all the ingredients together and set aside until needed.


Method

  1. Wash and grate the potatoes in a mixing bowl and then add the rest of the ingredients. Mix well. You can adjust the seasoning to your liking.
  2. Heat the oil in the pan then scoop a tablespoon full of potato mix in the pan. Fry the cakes slowly until they are nice and golden on both sides. I use a fork to fry the cakes as it is easier to turn them.
  3. Strain on paper towel and keep warm until all the cakes have been fried.
  4. Enjoy with a salad and sausages as we do or any way you like it.
