Potato Salad


As South Africans we love a good old BBQ, which means lots of meat and always a side dish. This salad is perfect as a side dish when you have a few people over for a BBQ. It is a recipe I got from my sister and it is very close to my heart. If you don’t fancy this with a lot of meat, you can even have it on its own as a main.


Ingredients

For the salad:

  • 1 kg Baby Potatoes, washed and halved
  • 250g Green Beans, trimmed and halved
  • 250g Cherry Tomatoes, halved
  • ½ Cucumber, cubed
  • 200g Feta Cheese
  • Brown Mushrooms, sliced
  • 4 Spring Onions, chopped
  • ½ cup Calamata Olives, pitted and halved

For the dressing:

  • 50ml Olive oil or Rapeseed oil
  • 30ml Red Wine Vinegar
  • 5ml Sugar
  • 5ml Salt
  • 5ml Mustard Powder
  • 5ml Coarse Black Pepper
  • 20ml Garlic and Herb seasoning

Method

  1. Cooked the potatoes till soft and cook the green beans until cooked but still firm.
  2. Make the salad dressing.
  3. Add all the ingredients with the dressing to the potatoes and beans while they are still warm and mix well.
  4. Set aside until cool. You can enjoy it on the day but I like to make it a day ahead for the flavours to marry well with each other.
