As South Africans we love a good old BBQ, which means lots of meat and always a side dish. This salad is perfect as a side dish when you have a few people over for a BBQ. It is a recipe I got from my sister and it is very close to my heart. If you don’t fancy this with a lot of meat, you can even have it on its own as a main.
Ingredients
For the salad:
- 1 kg Baby Potatoes, washed and halved
- 250g Green Beans, trimmed and halved
- 250g Cherry Tomatoes, halved
- ½ Cucumber, cubed
- 200g Feta Cheese
- Brown Mushrooms, sliced
- 4 Spring Onions, chopped
- ½ cup Calamata Olives, pitted and halved
For the dressing:
- 50ml Olive oil or Rapeseed oil
- 30ml Red Wine Vinegar
- 5ml Sugar
- 5ml Salt
- 5ml Mustard Powder
- 5ml Coarse Black Pepper
- 20ml Garlic and Herb seasoning
Method
- Cooked the potatoes till soft and cook the green beans until cooked but still firm.
- Make the salad dressing.
- Add all the ingredients with the dressing to the potatoes and beans while they are still warm and mix well.
- Set aside until cool. You can enjoy it on the day but I like to make it a day ahead for the flavours to marry well with each other.
