Cauliflower in Turmeric sauce


This Turmeric sauce I put together one day with a few ingredients in my cupboard and now it is one of my go to sauces to make with vegetables. It is amazing with butternut, or cabbage wedges or cauliflower. You can enjoy it as a side dish with roasted chicken or other meat or like me as a main with some rice or any grains you have.


Ingredients

  • 1 Onion, finely sliced
  • 1 tbs butter or rapeseed oil
  • 1tsp fennel seed
  • 1tsp turmeric
  • 1tsp medium curry powder
  • 2 tomatoes, chopped
  • 150 g baby spinach
  • 2 tbs water
  • 1 tbs maplesyrup
  • 100ml Evaporated milk to start..keep the rest of the can on the side as you might need it.

Method

  1. Fry the onion until soft in the butter or oil until soft
  2. Add the spices and cook for 1 minute
  3. Now add the tomatoes and water and cook until the tomatoes are soft.
  4. Add the Evaporated milk, maple syrup and spinach and stir through
  5. Place the vegetable of your choice in a casserole dish with a lid pour your sauce over.
  6. Put lid on and bake in a preheated oven by 180C for 45 min or until the vegetables are cooked through.
  7. Please note if your dish looks too dry for you add more of the evaporated milk and stir through. It depends on how saucy you would like it to be.
