My mother is law is turning 70 this month, so in honour of her, I am posting one of my favourite dishes from her kitchen. It took me a while to get it from her, but I think it was worth the wait. I love these as an alternative to the Italian or Swedish ones as they are crammed full of veg, herbs and spices. They might seem like a little bit of effort but it so worth it. You might as well make a big batch so you have lots of leftovers. The carrot in there keeps it nice and moist, even cold in a picnic basket.
Ingredients
- 450g Beef Mince
- 120g Pork Mince
- 1 Potato, grated
- 1 Carrot, grated
- 1 Onion, grated
- 1 Tomato, grated
- 1 slice white bread soaked in a 1/4 cup milk or 1/2 cup oats
- 1 Egg, large
- 1 tbs Worcestershire Sauce
- 1 tsp Coriander
- 1/2 tsp Nutmeg
- 1 tsp Aromat
- 1 tsp Mince spice or chicken spice
- 1/4 tsp Cayenne pepper
- 1 tsp Paprika
- 1 tsp Origanum, Thyme and chives
Method
- Place all the ingredients in a mixing bowl and mix well.
- Roll the mix in little meatballs and place in an oven dish that is lightly oiled.
- Bake in the oven at 180 degrees for 35 – 40 minutes until they are cooked through and browned. Remember to turn them halfway through the cooking process.
- Serve it with a salad or even mash or rice.
