This tea loaf I have made many many times over the years for a treat for everyone and as gifts. It is light and fragrant and easy to make. The loaf gets better day after day and great for lunch boxes.
Ingredients
- 115g Unsalted Butter
- 400ml Black Tea, brewed (I use Barry’s Gold Blend)
- 115g Sultanas
- 60g Glace Cherries, halved
- 115g Golden Caster Sugar
- 260g Self-Raising Flour
- 1tsp Bicarbonate of Soda
- 1/2tsp fine Sea Salt
- 1tsp Mixed Spice
- 1tbs Golden Syrup
Method
- Preheat the oven to 170 degrees and line a loaf tin
- Place the butter, tea and teabags, sugar, sultanas and cherries in a medium pot.
- Heat on medium heat until it starts to simmer slowly. Let is simmer for 4 minutes until the sugar has dissolved. Remove from the heat. Put the lid on an let it steep for 15 minutes. After 15 minutes remove the tea bags.
- Sift the dry ingredients together. Stir that into the tea mix and mix well. Then add the Golden Syrup and stir through.
- Pour into a loaf tin and bake for 50 – 60 minutes until the skewer comes out clean.
- Remove from the oven and leave to cool for 10 minutes.
- Turn out on wire rack and let it cool completely.
- Enjoy with lots of butter and a nice cup of tea!
