Fruitcake with love


Every Christmas I bake this fruit cake. It is my Grandmother Lida’s recipe. It is such a lovely and flavoursome cake. It lasts for months if it is not finished earlier. I bake this cake in November and let it mature for Christmas. For me this recipe is so special as it makes me feel I am sharing Christmas with my grandmother even though she is so far from me. It still warms my heart. You can add as much love as you like to this recipe. Enjoy!


Ingredients

  • 2 c Sugar
  • 2 c Water
  • 250g Butter
  • 250g Raisins
  • 250g Sultanas
  • 250g Mixed Peel
  • 250g Dates, chopped
  • 2 Egg, beaten well
  • 2tsp Bicarbonate of Soda dissolved in ½ c warm milk
  • 4 c Plain Flour
  • 60 ml Brandy or Whiskey for flavour

Method

  1. Preheat the oven to 150 degrees. Butter a baking dish well and cover with baking paper.
  2. Boil the following for 15 minutes: Sugar, Water, Butter, Raisins, Sultanas, Mixed Peel, Dates
  3. Take off the heat. Add the Bicarbonate of Soda Mix and the beaten eggs to the boiled fruit.
  4. Add the flour and the whiskey or brandy and mix well
  5. Pour in cake tin.
  6. Bake for 3 hours.
  7. Remove from oven and let it cool.
  8. Cover in a double layer of foil.
  9. You can enjoy it the following day or feed the cake with whiskey or brandy once a week until Christmas.
