The hubby told me the other day I share a lot of recipes I have received from family and friends which I adapted and tweaked and it is time I start sharing some of the dishes I make that came to existence with ingredients I had in the house. When you have pork mince and courgettes and don’t want to make Stir fry make a burger. I added a few ingredients together and this was the end result. I love them on the BBQ or on the griddle pan. For the hubby I made it in burger buns with some parmesan fries on the side but I love them just as they are with a nice chopped salad on the side. You can have it with as little or as much sauces as you like. Mayonaise or sweet chilli works well. Enjoy..
Ingredients
- 500g Pork Mince
- 1 Courgette, grated
- 1tsp/5ml dried chilli flakes
- 1 Onion, chopped
- 2 Garlic Cloves, crushed
- 1 cup Breadcrumbs
- 1tbs/15ml Olive oil
- Zest of 1 Lemon
- Salt and Pepper to taste
Method
- Add the oil to the pan and fry the onion and garlic till soft and caramelized. Set aside until cold.
- Grate the courgette and squeeze out as much water as you can from it.
- Add all the ingredients to the pork mince and mix carefully. Shape the patties and put them on a plate. Cover and refrigerate for 20 minutes or until needed.
- Take it out and leave on the counter for 15 minutes before shallow frying in a pan. I just use the pan in which the onions were fried in to fry the patties or on the BBQ or griddle pan.
- Now you can build yourself a burger or enjoy the patties with a lovely mixed chopped salad.
