With summer here in Ireland I have to make a few of my favourites to share and this is one of them. It is light, zesty and refreshing. I have made it many times with my Lemon & Herb Chicken and they were a match made in heaven, but you can enjoy it on its own as a main meal with some chunky bread on the side or with anything else you can think of. Enjoy and make it your own.
Ingredients
- 1 Small Green or Red Cabbage or half of each, thinly sliced
- 1 Carrot, sliced in matchsticks
- 1 Granny Smith apple, sliced in matchsticks
- 3 Radishes, sliced in matchsticks
- 2 Spring Onions, thinly sliced
- 1 handful of flatleaf parsley, chopped
- 1 tbs toasted Sesame seeds, for scattering at the end
- DRESSING:
- 3 tbs Olive oil or Rapeseed oil
- 1 tsp Toasted Sesame oil
- 1/4c Rice Wine Vinegar
- 3 tbs Honey
- 1 tbs Soy Sauce
- 2 Garlic cloves, minced
- 1tbs Ginger, finely chopped
- 1/2tsp salt
- 1/2ts chilli flakes
- 1/2tbs Lime Juice
Method
- Place all the dressing ingredients in a bottle. Put lid on and shake well. Set aside.
- Slice all the salad ingredients and place in a salad bowl.
- Pour the dressing over and mix well.
- Scatter the sesame seeds over.
- Serve and enjoy!
