Asian Style Slaw


With summer here in Ireland I have to make a few of my favourites to share and this is one of them. It is light, zesty and refreshing. I have made it many times with my Lemon & Herb Chicken and they were a match made in heaven, but you can enjoy it on its own as a main meal with some chunky bread on the side or with anything else you can think of. Enjoy and make it your own.


Ingredients

  • 1 Small Green or Red Cabbage or half of each, thinly sliced
  • 1 Carrot, sliced in matchsticks
  • 1 Granny Smith apple, sliced in matchsticks
  • 3 Radishes, sliced in matchsticks
  • 2 Spring Onions, thinly sliced
  • 1 handful of flatleaf parsley, chopped
  • 1 tbs toasted Sesame seeds, for scattering at the end
  • DRESSING:
  • 3 tbs Olive oil or Rapeseed oil
  • 1 tsp Toasted Sesame oil
  • 1/4c Rice Wine Vinegar
  • 3 tbs Honey
  • 1 tbs Soy Sauce
  • 2 Garlic cloves, minced
  • 1tbs Ginger, finely chopped
  • 1/2tsp salt
  • 1/2ts chilli flakes
  • 1/2tbs Lime Juice

Method

  1. Place all the dressing ingredients in a bottle. Put lid on and shake well. Set aside.
  2. Slice all the salad ingredients and place in a salad bowl.
  3. Pour the dressing over and mix well.
  4. Scatter the sesame seeds over.
  5. Serve and enjoy!
