Easy Muffins


I make these muffins about twice a week for all the children. It is quick and easy and healthy. You can add fresh blueberries, blackberries, strawberries or raspberries or you can use apple and pear. You can littery make any flavour you prefer. I also make a chochip version of them which got a few thumbs up. Have fun playing with this recipe and make it your own.


Ingredients

  • 1 egg, I use large eggs in all my recipes but use what you have in the house
  • 62,5 ml Rapeseed Oil or any flavourless oil
  • 125ml Milk
  • 100-120g Golden Caster Sugar
  • 200g Self-Raising Flour, sifted with the salt
  • 1/2 tsp Salt
  • 80g Oats, and a little bit to scatter over muffins before you bake them
  • 50- 80g Choc Chips or fresh fruit, (the berries I leave whole but the other fruits if I use them I do cut them up in bite size pieces)

Method

  1. Preheat the oven to 180 degrees Celsius, line a muffin tin and set aside.
  2. In a large bowl beat the egg, oil and milk well.
  3. Add the sugar and beat well. It must be a smooth mixture
  4. Add the Flour, salt and oats. Mix until just smooth.
  5. Now you can either add the choc chips or fruit at this stage and just fold them in and scoop them into the muffin tins
  6. I like to scoop my batter into the muffin tins and then place 3 – 4 berries in each muffin depends on their size.
  7. Scatter some oats over each muffin
  8. Bake for 20-25 min. Check that a skewer comes out clean
  9. Let it cool and enjoy

Notes:

When I make the choc chip version I use 50g cocoa powder and 150 g Self Raising flour to make it more chocolatty and then I use milk chocolate chips to mix in the batter.
