Apricot & Apple Strudel


With the lovely summers day we are having at the moment I wanted to make something fun for every one to enjoy. I had fresh apricots, granny smith apples and filo pastry and thought won’t it be nice to combine them and make a strudel of some sort. So here is my recipe. It is not too sweet or too tangy and you can have a nice dollop of Greek style Yoghurt or cream with. Enjoy!


Ingredients

  • 125 g unsalted butter
  • 1 packet filo
  • 6 Apricots, thinly sliced
  • 1 Granny Smith Apple, thinly sliced
  • 1tbs Lemon Juice, freshly squeezed
  • 1/4 cup Demerara Sugar
  • 2 tbs Plain Flour
  • 1/2 – 1 tsp Cinnamon, depends how much you like cinnamon

Method

  1. Preheat the oven to 180 degrees. Prepare a baking tray with parchment paper.
  2. Melt the butter in a small saucepan.
  3. Place the thinly sliced apricots and apples in a bowl.
  4. Add the lemon juice, demerara sugar, flour and cinnamon to the bowl and mix well. Set aside
  5. Lay the first layer of filo in your baking tray and brush with the melted butter. Repeat the process until you have 8 layers.
  6. Spread the filling in a straight line at the one side and then start rolling it up in a long sausage shape. Remember to tuck in both sides while you roll it up.
  7. Brush the rest of the butter over.
  8. Bake in the oven for 30 min.
  9. Take out and let it cool before you slice it and Enjoy!
