With the lovely summers day we are having at the moment I wanted to make something fun for every one to enjoy. I had fresh apricots, granny smith apples and filo pastry and thought won’t it be nice to combine them and make a strudel of some sort. So here is my recipe. It is not too sweet or too tangy and you can have a nice dollop of Greek style Yoghurt or cream with. Enjoy!
Ingredients
- 125 g unsalted butter
- 1 packet filo
- 6 Apricots, thinly sliced
- 1 Granny Smith Apple, thinly sliced
- 1tbs Lemon Juice, freshly squeezed
- 1/4 cup Demerara Sugar
- 2 tbs Plain Flour
- 1/2 – 1 tsp Cinnamon, depends how much you like cinnamon
Method
- Preheat the oven to 180 degrees. Prepare a baking tray with parchment paper.
- Melt the butter in a small saucepan.
- Place the thinly sliced apricots and apples in a bowl.
- Add the lemon juice, demerara sugar, flour and cinnamon to the bowl and mix well. Set aside
- Lay the first layer of filo in your baking tray and brush with the melted butter. Repeat the process until you have 8 layers.
- Spread the filling in a straight line at the one side and then start rolling it up in a long sausage shape. Remember to tuck in both sides while you roll it up.
- Brush the rest of the butter over.
- Bake in the oven for 30 min.
- Take out and let it cool before you slice it and Enjoy!
