With autumn here and warm comfort food the thing you craving for I thought of my dad’s peppered green beans. In our family my dad is famous for his peppered green beans. Everyone has their own love story about my dad’s green beans and to replicate it wasn’t easy because each persons hand is different when measuring ingredients. I called my dad and told him to please tell me step by step how he makes it. So here is my take on his recipe. It is an easy no nonsense recipe and a great side with your sunday roast. I love it the next morning cold on a buttered sliced sourdough, so good. Enjoy every bit!
Ingredients
- 200 g Green beans, fresh is best but you can use frozen as well
- 1 Onion, quartered and sliced
- 3 Medium Potatoes, quartered and sliced
- 1/2 tsp salt
- 1 – 2 tsp white pepper
- 2 – 3 tbs Butter
Method
- Place the green beans, onions, potatoes and salt in a sauce pan with lid. Pour water in and make sure it just cover your veg.
- Cook until soft with lid on then take the lid off and let it cook until it is dry and all the water has evaporated.
- Now add the butter and white pepper and stir until it is mushed up and cook for 4 -5 minutes on medium heat to make sure all the flavours have developed.
- Your beans are ready now.
