Spinach & Feta pie


A perfect dish if you want to go a bit meat free in the new year. I am starting my 2025 recipes with my take on a spanakopita. I just love making this ahead of time and freezing it in batches to be used when needed. This is one of the favourite recipes requested at work and at home. You can enjoy it on its own or with a nice zingy salad on the side or you can serve it as a side dish with your BBQ for all the meat lovers. Enjoy!


Ingredients

  • 1 Onion, finely chopped
  • 1 tbs Olive oil or rapeseed oil
  • 1 tbs Butter
  • 1-2 cloves garlic, depends on how much you want to add
  • 1 packet frozen spinach, defrosted and drained
  • 1/2 cup panko crumbs or bread crumbs
  • 1 egg, lightly beaten
  • 100 -150g Feta
  • 1/4 tsp nutmeg
  • zest of one lemon
  • 1tbs lemon juice, freshly squeezed
  • Salt and Pepper to taste
  • 1 packet fillo pastry ( you need 8 sheets)
  • 250 ml melted butter

Method

  1. Preheat oven to 190 degrees and butter an ovenproof dish well.
  2. Heat a frying pan with the butter and oil and fry the onion until nice and brown.
  3. Add the garlic and fry for a minute to release all those lovely flavour.
  4. Add the spinach and fry until it is cooked. about 5 – 8 minutes.
  5. Season with salt and pepper and nutmeg. Stir for another minute then set it aside to cool down.
  6. When cooled place it in a mixing bowl with the crumbs, feta, zest and lemon juice. stir throug and check your seasoning before you adding the egg. Mix that through.
  7. Now take your first sheet of fillo. brush it with the melted butter and place in you oven proof dish. Now continue until you you 4 layers of fillo in your dish.
  8. Pour the filling in and make sure it is spread all over the filo.
  9. Take the next fillo butter it and place on top of the filling. Repeat the prosess until you have 4 layers on top.
  10. I normally brush the last bit of butter on top and then bake it in the oven for 30 minutes or until nice and golden brown.

Note: You can do it in portions as well. I like to cut the fillo in long strips, brushing them with the melted butter and then adding about 2 tsp of filling to one end of the strip and rolling it up like a springroll. These I freeze and when needed place then frozen on a baking tray and bake in a preheated oven for 20 – 25 minutes.
