Every family in South Africa has their own take on bobotie. This is my version. I just love the sweet, zingy, spicy baked mince with a creamy custard baked until bubbling brown on top. I also serve it with yellow rice and a chopped tomato and onion salad on the side. Comfort and love all in one bowl. Enjoy my take on a very traditional dish and make it your own.
Ingredients
- 250g Beef Mince
- 250g Pork Mince
- 1 Onion, chopped
- 1 tbs Oil
- 1 tsp Turmeric
- 1 tsp Curry powder
- 1/2 tsp Tamarind paste or Worcestershire Sauce
- 1 tsp Apricot Jam
- Juice of half a lemon
- zest of 1 lemon
- 2 tbs Chutney
- 1/4 tsp White pepper
- 1/2 tsp Salt
- 1 slice of bread soaked in 1/4 cup of milk
- Custard:
- 1/4 cup milk
- 1/2 cup cream
- 2 eggs
- salt to taste
- 6 Bay leaves
Method
- Preheat the oven to 180 C
- Slowly fry the onion until soft and brown
- Add the mince and fry until nice and brown
- Add the turmeric and curry powder and fry for 1-2 minutes
- Add the Tamarind paste/worcestershire sauce and apricot jam. Stir and cook for 1 minute.
- Add the lemon juice and chutney, lemon zest, salt and pepper and stir for 2 minutes. Now add the soaked bread with the milk and stir through.
- Pour mixtute in an ovenproof dish.
- Mix all the custard ingredients and pour over the mince. stir it a bit before placing the bay leaves upright in the dish.
- Bake for 45 minutes or until nice golden brown and bubbly.
- Enjoy with yellow rice, tomato salad and some chutney
