I love this recipe and I have been making it for many years at home and at work. It is easy to prepare and you can either roast it in the oven or on the rotissary. The next day you can use your leftovers in a toasted chicken mayo sandwich or chicken fried rice or in a nice chicken curry.
Ingredients
- 1 Whole Chicken
- 1/2 cup Butter
- 2 tsp Herb de Provence
- 2 tsp Chicken Spice
- Juice of half a lemon
Method
- Mix the butter, herbs and lemon juice together.
- Place the chicken on a board. With your fingers lift the chicken skin around the breast up without tearing it.
- Take some of the butter mix and push it on the breast under the skin.
- The rest of the butter mix rub the whole chicken with it.
- Place the chicken in a roasting pan and roast in a preheated over for 1.5 hours to 2 hours until cooked.
- The chicken will be nice and golden
- Take out and let it rest for a few minutes.
- Enjoy with a nice salad or any side you like.
Notes: You can add your vegetables to the roasting pan and roast everything togther.
