This recipe is very dear to me. My great grandmother made this pie for Christmas as one of the many dishes on the table. I have asked my grandmother for her mum’s recipe and as you will see her recipe was written without measurements and no timings. So it was so much fun making this from scratch and to have something fun to share with everyone. The pastry is made with pork fat as I have a lot of fat in my fridge which I use for cooking. It gives it a lovely twist to the pastry. You can use shop bought puff pastry to make it easier. I serve this pie with homemade tomato sauce but you can have it with any sauce you wish. Make it small and pack it in your next picknick basket. Have fun playing with the recipe.
Ingredients
- Pie filling
- 200g Beef, I used chuck meat. keep the bone for the first cook
- 200g Fatty Pork, I used good piece of pork belly
- 1/4 tsp Cloves
- 1 1/2 tsp Thyme
- 1/2 tsp Salt
- 1/2 tsp White Pepper
- 2 tbs White Vinegar or White Wine Vinegar
- Pastry
- 550 g Plain Flour
- 1/2 tsp Salt
- 1/2 tsp Mustard Powder
- 1 Egg
- 50g Unsalted Butter
- 50g Pork Fat
- 100ml Water
- 1 egg for egg wash
Method
- Put the pork in one pot and the beef in another pot. Add enough water to cover the meat. Cook the meat until soft. It will take about an hour. You should be able to mash the meat with a fork at this stage.
- Strain the meat and mix them together in a cast iron pot.
- Add the cloves, vinegar, salt, pepper and thyme to the meat and pound it until it is fine. I used my pestle to pound the meat. Then fry it until it is brown and dry. It will have a few crispy bits, then you will know it is ready.
- For the pastry I used my stand mixer but you can do it by hand as well. Add the flour, salt and mustard powder together and mix well.
- In a small pot add the water, butter and pork fat and heat it until the fat and butter is melted but do not boil it.
- Add the egg to the flour and beat well. Slowly add the hot liquid to the flour a little at the time until a dough has formed. You don’t need to use all the liquid.
- Take the dough and place it on a lighty floured surface. Roll your dough out thinly. Then cut the dough to cover your pie dish.
- Cover your pie dish with the dough and then add your filling. Roll the rest of the dough out again to create a lid. Place it over your pie and close it by crimping the sides together.
- Beat the egg and brush it over your pie.
- Now preheat the oven to 180 degrees with a baking tray in for 10 minutes.
- Place your pie on the baking tray and bake the pie for 40 minutes
- Remove and let it rest for a few minutes and enjoy!
