Ouma Norrie’s Tomato Relish


As a child I grew up helping my dad and my grandmother bottleling and canning all the veg from the farm to be used during the year. This tomato relish of my grandmother is my all time favourite and it took me years to find her recipe and finally being able to make it myself here in Ireland is such a privilege. My memory of Ouma Norrie is always with her apron on in the kitchen cooking something. Now I am like her standing in my kitchen with my apron on cooking for the hubby and every one who needs a treat. I have simplified her recipe as the original recipe is for 10lb of tomatoes and I thought it will be good to be able to make a small batch now and again, but if it is tomato season make sure to get as many tomatoes as you can. In season tomatoes are the best and the taste is so amazing.


Ingredients

  • 1kg Tomatoes
  • 1c White vinegar
  • 1 Onion, chopped
  • 1tsp Salt
  • 1tsp Black Pepper
  • 1/2c Sugar
  • 1tsp Salt
  • 1tsp Medium Curry Powder
  • 1tsp Turmeric
  • 3 tsp Cornflour mixed with 45 ml fresh lemon Juice or white vinegar

Method

  1. Grate the tomatoes with the coarse side of the grater. You can use the tomato skins that’s left in your stock on another day.
  2. Boil the vinegar, onion and sugar in a large pot for 10 minutes.
  3. Add the spices and cook for 3 minutes before adding the tomatoes. Now cook the tomatoes for 40 minutes on medium heat.
  4. Add the cornflour mix. Stir through and cook for another 20 minutes until it is nice and thick.
  5. Bottle your tomato sauce warm and enjoy for the months ahead.
