If you need something to prepare for a busy week ahead, these muffins are great to make and keep in the fridge for a quick on the go lunch or for the childrens school lunches. I wanted to make something that you could eat hot or cold with some of my favourite ingredients like spinach, peppers, cheese and pancetta. I used the smoked pancetta for some extra flavour but you can use plain pancetta for this recipe as well. Have fun playing with the ingredients.
Ingredients
- 100g smoked pancetta
- 2 Spring onions, diced
- 1/2 Red pepper, diced
- 1 Celery stick, diced
- 1 Large hand full of Spinach, chopped
- 1c Cheese and little bit to scatter on top
- 2 large Eggs,
- 1c Milk
- 3 tbs Plain Flour
- 1 tsp Dijon Mustard
- 1/4 tsp Cayenne Pepper
Method
- Preheat the oven to 180 degrees and butter a muffin tin well.
- In a medium frying pan start to fry the pancetta for 2 minutes before adding the spring onions and red pepper and fry for another 2 minutes.
- Add the Spinach and fry until wilted. Remove from the heat and let it cool completely.
- Place in a medium bowl add the cheese and mix well.
- In a seperate jug beat the eggs to break them up before adding the milk, flour, mustard and cayenne pepper. Mix well.
- Add the egg mix to the pancetta mix and stir well.
- Scoop the mix into the muffin tin. make sure you fill it only 3/4 full. I scoop the filling and then top it with the egg mix that is left in the mixing bowl. you will see
- Scatter some cheese on each muffin.
- Bake for 20 – 25 minutes until well cooked . Remove and let it cool on a wire rack.
- When it is cold you can use a spoon to carefully scoop it out and place them in a container with a lid to keep in the fridge to be used as needed.
