For the last 18 years plus these little morsels of yumminess became part of the week day dinners especially for all the children I worked with. It is easy to prepare and you can make a lot and just freeze it in portions. Take them from the freezer and bake and enjoy it just like that with mash and peas or in a chicken fillet burger or my favourite as part of a Chicken Caesar Salad. They are also great cold so you can pack it in the school lunch boxes the next day. Have fun playing with this recipe.
Ingredients
- 320g Chicken Fillets
- 1 Egg
- 1/2tsp Chicken Spice or Soy Sauce
- 1 Cup Panko Crumbs
- 20g Parmesan, grated
- 50g Butter, melted
Method
- Preheat the oven to 180 degrees
- In a bowl beat the egg with the chicken spice or soy sauce add the fillets and massage it for a minute or so. Set aside while preparing the crumbs
- In another bowl mix the parmesan and crumbs together. Place a bakin tray next to your bowl. Now take one fillet at a time and place them in the crumbs. Make sure you cover the whole fillet with crumbs. I do like to press it lighty in the crumbs and then place them on the baking tray. Repeat the processs until all your fillets are crumbed.
- Now drizzle the melted butter over all the crumbed fillets and place in the oven. Bake for 20 minutes until nice and golden. Make sure to turn them half way through the baking.
- When ready remove from oven and enjoy any way you like.
