We call it Vetkoek

Here in Dublin I love to spoil my friends with tea parties and when one of them got engaged we celebrated it with a lovely finger food party. One of the nibbles was “vetkoek” filled with curry mince. It is a traditional treat in South Africa and now even our Irish, American and Filipino friends love them. Basically all it is is DEEP FRIED BREAD and directly translated is Fat Cake. Cholesterol police step aside.

So when I told them about my little book and blog one recipe I had to share was the “Vetkoek” recipe. Again we had to put our heads together. Monique brought her camera and
the baking started.

Ingredients

  • 500ml Luke Warm Water
  • 2tsp Sugar
  • 2tsp Yeast
  • 5 cups Plain Flour or ‘OO Flour
  • 2tsp Salt
  • 2tbs Oil
  • Oil for Deep frying

Method

  1. Add the sugar to the lukewarm water and then the yeast. Let it rise until foamy. It takes about 10-15 minutes in a warm place.
  2. Measure out the flour and salt in a large mixing bowl.
When the yeast is ready, add the oil to it and pour it over the flour.
  3. Mix well, then turn out on a floured surface and knead. Kneading takes about 15 minutes or until the dough is soft, elastic and smooth.
  4. Put it back in the bowl and cover. Let it rise for 50 minutes or longer.
  5. Roll in small golf size balls. Cover them again and let them rise for a further 20 minutes.
  6. Heat your oil in a large pot or deep fryer. Bake a few “vetkoeke” at a time until cooked through and golden brown.
  7. Serve with your favourite filling.
