Growing up, my mom did not do much of the cooking in our house. She did however make a few things that is very dear to me. Living in a different country, I do not get to spend too many of my Mom’s birthdays with her, but this year she is visiting me on her birthday. So, in honor of my Mom, this month, I will be posting two of my favourite recipes of hers. The first one is her Apple Pie. Our family loves this and makes it very often as a comforting and indulgent baked desert. Great with ice cream or custard and the longer it stands the better it gets.
Ingredients
- 1 c Plain Flour
- 1 tsp Baking Powder
- 1 c Sugar
- 2 Eggs, Large
- 1/2 c Milk
- 3 tbs Butter
- pinch of salt
- 2 tins of Apples
Syrup:
- 125 g Butter
- 1/4 c Sugar
- 1 c Milk
- Boil everything together for 15 minutes while the pie is baking.
Method
- Preheat the oven to 180 degrees
- Grease an ovenproof baking dish
- Cream the butter and sugar together
- Add the eggs one at a time and mix well
- Add the dry ingredients and milk together and mix
- Pour the batter in the baking dish.
- Put the apples in the batter.
- Bake the pie for 30 minutes.
- Take out and pour the hot syrup over.
- Let it cool to room temperature.
- Enjoy
