The second recipe honoring my mom is her cheese puffs (Kolwyntjies in Afrikaans). It is sort of like a no fuss savory muffin, using very few ingredients, it is something that can be whipped up in no time and delicious as well. It brings back very fond memories from my childhood. It was always a very special treat when my mom made these for us on lazy weekend mornings for a quick and yummy breakfast or brunch. Served with some extra grated cheese and lots of butter and even a blob of your favourite jam.
Ingredients
- 1 c Plain Flour
- 1 c Cheddar Cheese, grated
- 1 c Milk
- 1 Large Egg
- 1 tsp Baking Powder
- 1/2 tsp Salt or Aromat
- Pinch of Cayenne Pepper, salt and Pepper
Method
- Preheat the oven to 180 degrees
- Grease a mini muffin pan.
- Mix all the ingredients in a bowl.
- Place spoonful of the dough in the muffin pan.
- Bake for 12-15 minutes until a skewer comes out clean.
- Let it cool for a minute
- Serve with butter and jam or enjoy just plain.
- They are best served out of the oven.
