Savoury Oats


This is an ode to my dad. He is one of my food heroes. He taught me to cook from a very early age. Since I can remember my dad would make this porridge for breakfast and up to this day he still makes it for himself 2 or 3 times a week. For me this is a hug in a bowl and I love it still. This is my take on my dad’s savoury oats. Enjoy playing with the recipe and adding your own twist to it.


Ingredients

  • 50g Oats
  • 150 ml Water
  • pinch of salt
  • 1 Egg
  • 1 tbs Butter
  • Salt and freshly Ground Blackpepper
  • 2 tsp Parmesan cheese or cheddar cheese, grated
  • Tomato Sauce (optional)

Method

  1. Cook the oats in the water with salt until ready. It should take about 3 – 5 minutes. I taste it to see if it is ready to my liking.
  2. Meanwhile fry the egg on medium heat in the butter and season with salt and pepper. The yolk must still be runny and the white cooked.
  3. Spoon the oats in your bowl.
  4. Place the egg on top and drizzle with the butter from the pan.
  5. If you are using tomato sauce drizzle some over.
  6. Add the grated parmesan or cheddar cheese
  7. Enjoy!

P.s. I love to take a fork and knife and chop up the egg with the porridge after I have added everything and then stir it through before taking my bowl and fork and sit in a sunny corner of my sofa enjoying this and thinking of my dad.
