Green Cauliflower Salad with Kombucha dressing


It is summer time here and a good excuse to just enjoy a great plate of salad for a meal or as a side with your BBQ. I just love grilling veg and tossing them together. This is one of those salads that you can use what you have in your fridge and enjoy. I used all my favourite greens with cauliflower in this salad. Hope you will enjoy it as much as I do. It is light zingy and fun making it your own.


Ingredients

  • 2 tbs Olive Oil
  • 1 tbs Mixed Herbs ( I used Sabzi Gharni but Italian Herbs will work as well)
  • 1 Small Cauliflower, broken in small florets
  • 1 Romaine Lettuce, quartered
  • 6 Asparagus, halved
  • 5 Spring Onions, halved
  • 80 g or Big Handful of Baby Spinach
  • 80g or about 6 Green Beans
  • 1/3 cup Cashews, halved
  • 1/4 Sunflower Seeds
  • 100g Feta
  • Dressing:
  • 100ml Olive Oil
  • Juice and zest of Half a lemon
  • 80ml Kombucha
  • 1 tsp Honey
  • Salt & Pepper to taste

Method

  1. Preheat the oven to 200C.
  2. Make the dressing and set aside.
  3. Mix the cauliflower with the herbs and 1tbs olive oil together. Toss on baking tray and bake for about 20 minute or until it golden brown. Take out and set aside
  4. Now roast the cashews and sunflower seeds for 5-8 min. Be careful not to burn them. Take out and set aside.
  5. Blanch the green beans and set aside
  6. Drizzle olive oil over the lettuch, asparagus and spring onion. Heat your griddle pan and grill the vegetables in batches until golden but still with a crunch. set aside
  7. Take your salad bowl or serving plate. Start with your spinach leaves. Top with the geen beans, cauliflower, lettuce, asparagus and spring onions. Scatter the nuts and seeds over and drizzle some of the dressing on. Crumble the feta and serve your salad with the rest of the dressing on the side.
  8. Enjoy!
