Courgette, Pumpkin and Apple Soup

Autumn is here and all the leaves are turning orange, red and brown. My favourite colours all in one season. The days are shorter and the pumpkins/squash are ready to be harvested and enjoyed in many recipes. I so love pumpkins. A vegetable that works for sweet and savoury dishes. On its own and as an ingredient. This simple vegetable is so versatile. It is also the start of soup season in our house as it comfort in a bow. So for the next few weeks I will share some of my favourite soup recipes for you to try and enjoy.


Ingredients

  • 1 tbs Olive Oil
  • 1 Leek, thinly sliced
  • 2 cups Pumpkin, diced
  • 1 Courgette, diced
  • 1 Apple, diced (Pink Lady or Granny Smith works I used an apple from our tree)
  • 1 cup Vegetable Stock or Water
  • 1 can Coconut milk
  • 60ml White Wine
  • 1 tsp Black Garlic Sea Salt ( you can use plain sea salt)
  • 1 tsp Black Pepper

Method

  1. Sauté the leeks in a medium sized pot until caramelized.
  2. Add the pumpkin, courgette and apple and cook for 5-8 minutes on medium heat.
  3. Add the wine and cook until reduced before adding the stock. Put the lid on and slowly cook until all the vegetables are soft about 20 minutes.
  4. Add the coconut milk and cook for 10 minutes.
  5. Blitz until smooth and season with salt and pepper.
