Chicken Fried Rice


When you have left over rice in the fridge that needs to be used up this recipe will be a quick and easy week day dinner. I have been making many versions of this rice dish for the children over the years. Just add what you have in your fridge to your rice and have a fun dinner using up your leftovers or you can make it from scratch. Start cooking your rice and set it aside while you chop and prepare all your ingredients. I like to have everything ready on my chopping board and in bowls before I heat my frying. As soon as that pan is ready you will be frying and adding until it is ready and that will take about 10-15 minutes. Then dinner is done. Enjoy!


Ingredients

  • 2 tbs Vegetable oil
  • 1 Large Chicken breast, diced or 2 deboned thighs, diced
  • 1/2 tsp Chinese 5 Spice
  • 1/2 tsp Salt
  • 1 Onion, chopped
  • 1 Green Onion, chopped
  • 1 Carrot, diced ( large carrot)
  • 1 Garlic, crushed
  • 1/2 – 1 Red Chilli, chopped (depends how spicy you want it)
  • 1tsp Ginger, finely grated
  • 2 cups Cooked rice
  • 1 tsp Lime Juice (freshly squeezed)
  • 3 tsp Soy Sauce
  • 1 tsp Sesame Oil
  • 1 tsp Freshly Ground Black Pepper

Method

  1. Prepare all the ingredients and set aside.
  2. Heat your frying pan to medium heat
  3. Add 1 tbs Oil and fry the chicken with the chinese 5 spice and salt until browned. Scoop out and leave it in a bowl.
  4. Now add the rest of the oil to the pan and fry the onion, green onion and carrot until it is soft before adding the chilli and garlic and fry them for 2 minutes.
  5. Add the rice and chicken and fry for 2 minutes. Lastly add the Soy Sauce, Sesame Oil, Lime Juice and Black pepper. Stir through. this is where you need to taste and maybe add a bit more soy or sesame oil or black pepper.
  6. Remove from the heat and serve in nice deep bowl.
