Hubby’s Sugar Cookies


These cookies came by accident as my husband loves the chewyness off chocolate chip cookies but wanted something with no chocolate in it. They are quick to make and fun. You can enjoy it with your cup of tea/coffee or you can use them to make yourself an icecream sandwich. Enjoy!!


Ingredients

  • 130g Unsalted Butter, room temperature
  • 100g Light Brown sugar
  • 100g Demerara Sugar
  • 1 Large Egg
  • 2tsp Vanilla
  • 180g Plain Flour
  • 1/2 tsp Bicarbonate of Soda
  • 1/2 tsp Baking Powder
  • Pinch of Sea Salt

Method

  1. Preheat the oven to 180 C. Line two baking trays.
  2. Cream the butter, sugar, egg and vanilla together. Use an electric beater but you can use a wooden spoon as well.
  3. Add the flour, Bicarbonate of Soda, Baking Powder and Sea Salt and stir well until dough is formed.
  4. Use two teaspoon and blob spoon full of dough on a lined baking tray.
  5. Place your trays in the fridge for 10 minutes.
  6. Place one tray at a time in the oven and bake for 10 – 12 minutes. I normally put them in for 11 min. Depends on how crunchy you would like them.
  7. Take them out and leave on a cooling rack. Store them in a cookie tin.
  8. This recipe makes about 28 cookies
