Back to school is nearly upon us and then the planning for lunch boxes and midday snacks for young and old starts. These energy balls are quick to whip up and lasts for a week or two in the fridge. To change it up a bit, I some times add dried mango and cashew nuts to the mix and substitute the coffee with water or cooled rooibos tea. It is a lovely snack to have on hand. Ingredients
- 75g Oats
- 75g Ground Almonds
- 10 dates
- 1 tbs Chia Seeds
- 2 tbs Cacao Powder, plus extra for dusting
- Pinch of Sea Salt
- 1tbs Protein Powder (optional)
- 1tbs Honey
- 75ml Coffee or filtered water or freshly brewed rooibos tea, cooled
- 2tbs Peanut Butter
- sesame seeds for covering
Method
- Place all the dry ingredients and dates in a blender and blend for 30 seconds or so. It will look like fine bread crumbs.
- Add the honey, coffee and peanut butter and blend until it forms a sticky dough.
- Take two small bowls and put sesame seeds in one and cacao powder in the other.
- Roll the dough in small balls toss them then either in the sesame seed or cacaco powder and stir until coated.
- Place in an airtight container and put them in the fridge for at least an hour before enjoying them.
- They can be kept in the fridge or freezer.
